  • After preparing your vegetables, add the olive oil, onions, bell peppers, and garlic to a small skillet.
  • Saute the vegetables over medium heat for about 5 minutes.
  • Next, add the canned diced tomatoes, cumin, black pepper, and paprika while leaving the skillet over medium heat.
  • Stir the mixture until all the herbs, spices, and sauteed vegetables are mixed together.
  • Once the mixture starts to boil, reduce the heat to a lower setting and then add the eggs. Cover with a lid.
  • Cook for about 20 minutes or until the eggs are the way you like to eat them. These were fully cooked.
  • Serve and eat while hot.
