After preparing your vegetables, add the olive oil, onions, bell peppers, and garlic to a small skillet.
Saute the vegetables over medium heat for about 5 minutes.
Next, add the canned diced tomatoes, cumin, black pepper, and paprika while leaving the skillet over medium heat.
Stir the mixture until all the herbs, spices, and sauteed vegetables are mixed together.
Once the mixture starts to boil, reduce the heat to a lower setting and then add the eggs. Cover with a lid.
Cook for about 20 minutes or until the eggs are the way you like to eat them. These were fully cooked.
Serve and eat while hot.
