  • Preheat Oven: 375 degrees
  • Stuff a single thin slices of deli ham in each muffin cup.
  • Using a small bowl, whisk eggs, cilantro, tomato and cheddar cheese together.
  • Pour egg mixture over the ham in the muffin pan.
  • Place the pan in the oven for about 20 minutes.
  • When the egg mixture has cooked, remove from the oven.
  • Let the breakfast egg cups cool and then remove from the pan.
