Keto Beans Recipe

Keto beans can make wonderful additions to chili, soups, stews, and even salads. However, they can take an incredibly long time to prepare. Even when you prepare the unsalted keto black beans from a can, it can take many hours to prepare them well. Therefore, the purpose of this keto beans recipe is to create a batch of beans that can be likened to a traditional can of beans. 

As a basic starter keto beans recipe, once the beans cook, they can be measured, packaged, and frozen. Then, when needed, you can conveniently just grab a cooked bag of keto beans from the freezer and then quickly thaw it. In doing so you can add more seasonings to make the keto beans taste the way you want them to taste.

With that said, keep in mind that this recipe does not leave you with super tenderized pot of keto beans. Once frozen, they will become a little more tender and develop a little more depth of flavor. When adding them to recipes like the keto Texas cowboy chili or the keto chicken fajita soup, the beans will absorb more flavor and become more tender after simmering with the chili or soup for a relatively short period of time.

Ingredients 

The keto beans used to prepare this recipe are the yellow soy beans. The herbs and spices used to give the soy beans an initial layer of flavor includes salt, parsley, thyme, paprika, onion, garlic, green onions, black pepper, and cayenne pepper. 

Remember that this is only a starter keto beans recipe that can be used to make making other recipes much more convenient and easy. Since this is only a starter recipe, the seasonings are really kept to a minimum.

If you just want to eat a bowl of keto beans, you would have to soak the beans for 12 hours, at least double the seasonings, and then cook the beans for several hours until they are tender and ready to eat. 

Freezing

Just a quick note on freezing. Measure and divide the beans before freezing them. Freeze the keto beans in amounts that you think you can use all at once. If you freeze one big bag of beans you will have to thaw the entire bag of beans when you may only need a small portion of the beans in a particular recipe.

  • Measure and rinse the yellow soy beans with water.
  • Then, place the beans in a container that has a lid with 2 cups of water.
  • Add the salt, parsley, thyme, paprika, onion, garlic, green onions, black pepper, and cayenne pepper to the container.
  • Stir the mixture well and then place the container of beans in the refrigerator to soak overnight or for 6-12 hours.
  • After soaking, pour the contents of the container into a medium pot with a lid and add another 2 – 4 cups of water and bring to a boil.
  • Once it starts to boil, reduce heat and let simmer for 3-4 hours.
  • Stir every 15 minutes or so. Add more water as needed to prevent burning.
  • When the water cooks off and the beans are tender enough to comfortably chew, remove from the heat and let cool.
  • Once cool, divide the beans and freeze until needed.
