This keto cheesy cauliflower rice is delicious! While there is no real substitute for macaroni and cheese, this keto cheesy cauliflower rice might make you forget all about the mac and cheese. Cheesy Cauliflower Rice

Ingredients 

This particular keto cheesy cauliflower rice is prepared with cauliflower rice, cheese, butter, cream, paprika, pepper, and salt (optional).

  • Cauliflower Rice – The recipe starts with a bag of cauliflower rice being thawed and basically cooked in the microwave. Once cooked, you can carefully open the bag and allow the cauliflower rice to cool. When cool enough to do so, drain the excess water and then use your hands to squeeze the cauliflower rice relatively dry. The more juice you get rid of the creamier and cheesier this keto cheesy cauliflower rice will be.
  • Cheese – A soft and creamy American cheese is the main cheese used to make the rice. However, a small amount of parmesan cheese is added to complete the cheese taste. 
  • Butter – A salted butter is added to flavor the rice and help prevent sticking or burning. 
  • Cream – Any keto friendly milk or cream can be added. My first choice would be a nice and already creamy heavy cream. However, half and half works pretty well too.
  • Seasoning – And finally a dash of paprika, pepper, and salt can be added to finalize the taste of the keto cheesy cauliflower rice.

Ingredients
  

  • 10 oz. Cauliflower Rice (Cooked, Drained, Squeezed)
  • 2 oz. American Cheese
  • 2 tbsp. Parmesan (Shredded)
  • 1/2 tbsp. Salted Butter
  • 1 tbsp. Half & Half (or Heavy Cream)
  • 1/16 tsp. Paprika (A Pinch)
  • 1/16 tsp. Black Pepper (A Pinch)

Instructions
 

  • Microwave the bag of cauliflower rice until thawed and mostly cooked.
  • Let the cauliflower rice cool. Then drain and squeeze the excess juice from the cauliflower. Set aside.
  • Place the American cheese, parmesan cheese, butter, and heavy cream together in a small pot.
  • Heat and stir the cheese mixture until the cheese melts and combines.
  • Now add the cauliflower rice along with the pinch of paprika, black pepper, and salt (optional).
  • Stir until combined well and enjoy.
