The spinach mushroom scrambled eggs are a deliciously savory and healthy way to start the day. And the sky is the limit with the number of things you can add to it to change things up a bit. So, this morning, I had scrambled eggs with mushrooms and spinach.

The scrambled eggs with spinach and mushrooms provide a sophisticated a savory flavor. So, instead of piling on a bunch of cheese, I seasoned the eggs with garlic powder, onion powder, and black pepper. If time permits, you could really jazz up this same recipe with fresh minced garlic and fresh chopped onions. That is what I would do if I were making these to eat for dinner. But, it is morning time and I just finished my coffee, so powdered garlic and onions were used.

These spinach mushroom scrambled eggs were sauteed in olive oil. However, if it were not already a hot day, my first choice would have been the ketogenic coconut oil. If you do not mind the flavor, this is another oil that can be used to cook the spinach and mushroom scrambled eggs.

After cooking the mushroom and spinach scrambled eggs, I added mini spinach and mushroom side salad to make it a complete breakfast. If you want a slice of bread to go with, the healthy low carb bread is a wonderful tasting keto breakfast bread.
