These strawberry keto popsicles are perfectly sweetened keto berry popsicles with only 1g net carbs. To keep the carbs low, these keto strawberry popsicles are made with a combination of fresh strawberries and strawberry flavor extract. To compensate for the missing vitamin C and the naturally semi-tart taste that a strawberry provides, vitamin C powder is used in this keto popsicles recipe.

Since I do not care for the taste of most sugar substitutes, a sugar free syrup is used as the sweetener. To me, it gives these strawberry keto popsicles a very natural taste. With that said however, if you do not want to use a syrup, monk fruit is a pleasant tasting sugar substitute that can be used instead. It is a zero carb sugar substitute that has a pleasant taste with no side effects. You can read some monk fruit reviews. But, I still prefer the taste of the sugar free syrup. If you have a sugar substitute that you already like and use, you can by all means use that instead of the syrup. Or you can use that in addition to the syrup to make these strawberry keto popsicles sweeter.

  • First prepare your molds by putting the popsicle sticks in place.
  • Place the rubber mold on something small, rigid and freezer safe to make transfer easy. You can use a rectangular shaped Tupperware lid.
  • Then add the strawberries, water, extract, syrup and vitamin c powder to the blender.
  • Cover the blender with a lid.
  • Blend until the keto strawberry popsicle mixture is smooth (less than a minute).
  • Pour the mixture in the popsicle molds. Place the filled molds in the freezer to freeze for 3-5 hours.
