An authentic pina colada is made with one part coconut cream, one part white rum and three parts pineapple juice. While an unsweetened coconut cream is not a bad thing, the rum and pineapple juice are a carb overload. So, this is a sugar free pina colada flavored keto popsicle recipe that you can add to your low carb meal planner.

This keto popsicle recipe includes an unsweetened coconut milk, water, and pina colada flavored drink mix. Canned coconut milk is not the same as coconut milk sold in a carton next to the dairy milks. I used this canned coconut milk. So, when you get ready to mix the flavor, remember to mix it with the water first. The canned coconut milk will not allow it to dissolve easily, so make sure you dissolve it well in the small portion of water first. You can even heat it a little (if necessary).

  • Start by inserting the popsicle sticks into the rubber mold. Place the mold on something rigid and freezer safe to make transporting it to the freezer easy.
  • Next, add the flavor package to the water. Stir until the mixture dissolves really well in the water.
  • Now place the unsweetened coconut milk into a small container and add the water mixture.
  • Stir the coconut milk and water mixture well and then fill the molds.
  • Place the molds in the freezer for 3-6 hours until the popsicles are frozen.
