The cucumbers must be peeled beforehand to end up with a red or pink colored popsicle. The watermelon drink mix is what gives the watermelon flavor for these keto popsicles. Vitamin c is an antioxidant that provides a nice boost to the immune system and helps collagen do what it needs to do in the body. However, the vitamin C powder is added to provide just a hint of sourness to balance out the sweetness. In addition, a few drops of optional red food coloring are used to make the popsicles turn the pinkish red color that you see.

  • Start by Inserting your popsicle sticks into the mold.
  • Then place the mold on something rigid and freezer safe to make it easy to transfer.
  • Next, peel the skin from the cucumber. Then cut the cucumber into cubes until you have 1 cup full.
  • Then place the peeled cucumbers in the blender with the water, sugar-free watermelon drink mix, food colorings, and vitamin C powder.
  • Blend everything together until the cucumber mixture is smooth and free of any chunks.
  • Now pour the cucumber watermelon mixture into the popsicle molds.
  • Place the filled molds in the freezer to freeze for 3-6 hours.
