These sweet and tart kiwi lemon keto popsicles are a deliciously refreshing addition to your low carb meal planner! In Texas, we had a high of 97 degrees Fahrenheit today. So, keto popsicles are just what we need to combat the summer heat. I have already made a second small batch of keto popsicles to store in the freezer. The nice part about these kiwi lemon keto popsicles is that you get a little taste of some other fruits without breaking your keto diet.

Some of you may be wondering how you can eat a kiwi fruit? Well an entire 69g kiwi fruit contains 10 carbohydrates and 68g of the keto approved blueberries also contain 10 carbohydrates. So, I decided to mix things up a bit and make delicious kiwi lemon keto popsicles. When you mix the kiwi with a sugar-free lemonade drink mix, you end up with delicious, fruity, and fresh tasting keto popsicles, not just frozen ice. They have a lot more texture and taste.

The recipe below makes 4 popsicles. Kiwi fruit contains small black seeds. Once blended, the black seeds will mostly settle to the bottom of the container. I do not mind the little crunch and texture that they add to this frozen treat. However, you can remove the seeds and some of the remaining pieces of fruit by pouring the mixture in a sieve before pouring them into a popsicle molds. Removing the seeds and fruit pieces will likely reduce the size or number of popsicle the recipe will yield.

The mold used to make these kiwi lemon keto popsicles is very convenient to use. The popsicles are really easy to unmold in comparison to the mold used to make the keto blueberry popsicles.

  • Insert your popsicle sticks into the mold.
  • Then place the mold on something rigid and freezer safe for an easy transfer.
  • Next, remove the brown skin from your kiwi fruit.
  • Place the kiwi fruit in the blender with the water, sugar-free lemonade drink mix, and the food colorings.
  • Blend everything together really well until the kiwi is smooth and not chunky.
  • Now pour the mixture into the popsicle molds.
  • Place in the freezer to freeze for 3-6 hours.
