Keto Cajun Chicken Recipe

This keto cajun chicken recipe was made with a jar of cajun butter marinade that I received from one of my neighbors. Not knowing what to expect, I initially used the marinade to make a quick Cajun Grilled Tilapia. Well, that turned out to be a real hit with the family member I shared it with. So, I looked forward to using this marinade to make this keto cajun chicken recipe.

With the marinade, you only need 3 more ingredients. I used boneless chicken thighs because they are naturally moist and tenderize easily.  In addition to the cajun butter marinade, I added minced garlic, minced yellow onions, and cayenne powder. The minced garlic was from a jar, but the minced yellow onions were freshly chopped. And lastly, cayenne pepper was added to the marinade.

As mentioned, I received a free jar of the Louisiana Cajun Butter Marinade from one of my neighbors the other day. So, I do not know if it is available a most local grocery stores. I have included a link for you to purchase it online if needed. The Zatarain’s Cayenne Pepper was at my local grocery store.

Stove: Medium Heat | Cook: 45 Mins |  Serves: 6

Ingredients:

Preparation

  1. As a marinated dish, you can place the thaw (an unfolded) chicken in a medium skillet with a lid.
  2. Mix the cajun butter marinade in a bowl with the minced garlic, yellow onion, and cayenne pepper.
  3. Then, pour the mixture over the chicken thighs. Use a fork to make sure that both sides are cover with the marinade. Cover with a lid and let sit for 15-20 minutes (optional).
  4. Next, place the skillet with the chicken on the stove burner. Set the stove burner to a medium-low heat.
  5. Cook for a total of about 45 minutes, but flip after  about 15 minutes.
  6. Serve on a plate or bowl with a keto low carb side of your choice.
