Strawberry Feta Spinach Salad (Keto, Low Carb)
I personally enjoy eating salads a lot, so I decided to mix things up a bit with this strawberry feta spinach salad. This strawberry feta spinach salad is made with cooked chicken, pecan halves, strawberries, fresh spinach leaves and feta cheese crumbles. All things you can likely find at the grocery store. You can use any cooked chicken that you like. I used cooked chicken thighs that I had seasoned to use with some of my other salads like the Low Carb Asian Chicken Salad.
I enjoy eating pecans, not only because of the health benefits of pecans, but because they make a very satisfying low carb snack. However, if you do not feel the same way, you can just get a small bag of pecan halves just for this strawberry feta spinach salad.
Strawberries are one of the keto approved low carb fruits. Therefore, if you are a diabetic, you can eat them in moderation. This particular salad includes only two strawberries that are sliced into multiple pieces.
Spinach is one of my favorite low carb vegetables. You can get whichever kind you prefer or is available at the store. When possible, I prefer the organic baby spinach leaves. Although, most of them all seem to taste the same.
The feta cheese crumbles are kind of like the “icing” on top. If you have never had feta cheese, it is hard to explain, but you will see how this semi-creamy cheese really brings the strawberry feta spinach salad flavors together. And finally, top it with either a low carb sugar-free strawberry vinaigrette dressing or italian dressing.
Strawberry Feta Spinach Salad
- Place the spinach leaves in a medium salad bowl.
- Add the cooked chicken cubes or chunks to the salad.
- Then, slice your fresh strawberries on top of the chicken.
- Next, sprinkle the salad with unsalted pecan halves and feta cheese crumbles.
- And lastly, pour the sugar-free, keto, or low carb vinaigrette salad dressing of your choice.
