  • Preheat the oven to 350 degrees.
  • Mix the dry ingredients together in a medium mixing bowl.
  • Then, add wet ingredients to the bowl and stir until the batter is mixed evenly.
  • Next, carefully pour the batter evenly into the donut molds. (I typically only get 5 donuts from this keto lemon donuts recipe.)
  • Place the batter-filled donut mold in the oven for 15 to 20 minutes.
  • Remove from oven and let cool completely before removing from the mold.

Icing Preparation:

  • Once the donuts have cooled and been unmolded, use a small round microwave-safe bowl for your icing ingredient prep. The bowl should be just large enough for you to dip the keto lemon donuts in the glaze after preparation.
  • Add the sugar-free white chocolate chips, lemon juice, and food coloring to the bowl.
  • Next, heat the icing ingredients in the microwave for 20 – 30 seconds.
  • Gently (but quickly) stir the icing until the lumps are removed and the lemon juice is blended into the icing.
  • Dip each donut in the mixture and place them on a plate or on parchment paper (dipped side up).
  • The icing will harden quickly, so you can reheat as needed.
