Mexican Cheesy Chicken Soup Recipe

I skipped breakfast this morning, so I came home and made this Mexican Cheesy Chicken Soup Recipe! It was really quick and easy to make, so I immediately scarfed it down for lunch. I used leftover chicken breast that I cooked yesterday. Therefore, it was very easy to bring this Mexican Cheesy Chicken Soup Recipe together. The cheesy chicken soup base is made with homemade chicken broth, water, fat free cream cheese and shredded mild cheddar cheese. For this particular recipe, I wanted it to be creamy (and lower in fat) than cheesy.  So, if you prefer a cheesier taste, use about two ounces of cream cheese and 1-2 cups of shredded mild cheddar cheese.

Serves: 1 -2 | Prep: 30 Mins



  1. The chicken thighs were cooked the night before and seasoned to taste with cumin, garlic powder, onion powder, paprika, and seasoning salts. After removing the cooked chicken, add about a cup of water to the chicken juice. The remaining juice is the chicken broth. (Alternatively, just a prepared chicken broth).
  2. Add one cup of the seasoned chicken broth and one cup of water to a small pot or a medium skillet to prepare the chicken.
  3. Slice the cooked chicken and then add it back to the mixture in your skillet or pot.
  4. Next, add cream cheese, diced tomatoes, cilantro and jalapenos. Stir the cream cheese into the broth mixture while bringing it to a light boil.
  5. And finally, add the shredded mild cheddar cheese to make the cheesy chicken soup. With cilantro being an exception, all of the added ingredients are salty and will contribute to the flavor. So you can do a taste test before serving the soup to see if you need more salt or spice.
  6. Serve the soup in a medium bowl and enjoy while it is still hot.


This Mexican Cheesy Chicken Soup Recipe can be made spicier by adding cayenne pepper powder and using fresh cut jalapenos. And again, for a cheesier cheddar taste, use 2 cups of mild cheddar cheese with only two ounces of fat free cream cheese.
