Cheesy Chicken Soup Recipe

I used leftover chicken breast that I cooked yesterday. Therefore, it was very easy to bring this Mexican Cheesy Chicken Soup Recipe together. The cheesy chicken soup base is made with homemade chicken broth, water, fat free cream cheese and shredded mild cheddar cheese. For this particular recipe, I wanted it to be creamy (and lower in fat) than cheesy.  So, if you prefer a cheesier taste, use about two ounces of cream cheese and 1-2 cups of shredded mild cheddar cheese.

  • The chicken thighs were cooked the night before and seasoned to taste with cumin, garlic powder, onion powder, paprika, and seasoning salts.
  • After removing the cooked chicken, the remaining juice is the chicken broth. Simply add about a cup of water to the chicken juice. (Alternatively, just prepare a chicken broth).
  • Add one cup of the seasoned chicken broth and one additional cup of water to a small pot or a medium skillet.
  • Finish preparing the chicken by slicing the cooked chicken. Then add the sliced chicken back into the chicken broth mixture.
  • Next, add cream cheese, diced tomatoes, cilantro and jalapenos. Stir the cream cheese into the hot broth mixture while bringing it to a light boil.
  • And finally, add the shredded mild cheddar cheese to make the creamy chicken soup cheesy.
  • Serve the soup in a medium bowl and enjoy it while still hot.


With the cilantro being an exception, all of the added ingredients are salty and will contribute to the flavor. So you can do a taste test before serving the soup to see if you need or want to add more salt or spice.

This Mexican Cheesy Chicken Soup Recipe can be made spicier by adding cayenne pepper powder and using fresh cut jalapenos.
