Keto Mexican Scrambled Eggs
In the “stormy weather” keto diet motivation post, I mentioned eating some delicious keto Mexican scrambled eggs! In my opinion, those keto Mexican scrambled eggs turned out really well! However, this is not an exact replica of the recipe, but it is definitely a noteworthy flavorful combo.
After inhaling the first bite of what I am calling keto Mexican scrambled eggs, I had to make sure I knew what ingredients had been used. I confirmed that she used red bell pepper, green bell pepper, jalapeno pepper, yellow onions, garlic, cilantro, salt and black pepper. You can just imagine how good this smelled as it was being prepared with bacon in the oven – wow!
All the peppers were finely chopped along with the onion. However, the fresh garlic seemed to be minced, not chopped. After sauteing the chopped peppers, onions, and garlic she added the egg mixture along with the cilantro. So, I made my own unique version of keto Mexican scrambled eggs this morning to share with you.
Keto Mexican Scrambled Eggs
Serves: 2 – 3 | Prep: 10 Mins
Ingredients:
- 4 Medium Eggs
- 1 Tbsp. Chopped Onions
- 1 Tbsp. Chopped Red Bell Pepper
- 1/4 C. Fresh Chopped Cilantro
- ¼ Tsp. Minced Garlic (from a jar)
- 1 Tsp. Dice Jalapeno’s (used Mt. Olive brand from a jar)
- 1/8 Tsp. Powder Cumin
- ¼ Tsp. Powdered Paprika
- Mediterranean Sea Salt
- Preparation
- Mix the eggs in a small bowl with powdered cumin, powdered paprika, sea salt and fresh chopped cilantro.
- Next, chop yellow onions and red bell pepper.
- Add the chopped vegetables, minced garlic, and diced jalapeno’s to a skillet with about 2 teaspoons of olive oil.
- Place the skillet on the stove and use a medium heat setting to saute the pepper, onion, and garlic for about 3 minutes.
- Next, add the eggs mixture to the skillet.
- Using a spatula, mix it all together until the eggs are fully cooked.
- Top with some more fresh chopped cilantro and enjoy!
