Tomato Avocado Omelette

Serves: 1 | Microwave: 1 Minute

Ingredients:

2 Medium Eggs

1 Tbsp. Light Mayo

1/8 Tsp. Garlic Powder

1/2 Small Ripe Avocado

3 – 4 Sliced Cherry Tomatoes

1 Tbsp. Chopped Cilantro

Cayenne Powder (Optional)

Mediterranean Sea Salt (to taste)

Preparation:

  1. Use a small microwave safe bowl to blend the eggs and mayo.
  2. Once blended, you can add and stir in the garlic powder.
  3. Place in microwave for about 1 minute (plus or minus) until cooked.
  4. Remove from microwave and add the fresh avocado, cilantro, cherry tomatoes, cayenne pepper, and sea salt.
