This is a sauteed eggplant, low carb style recipe. This unique purple fruit contains about 4.8 grams of carbs and 2.5 grams of dietary fibe per 1 cup. Therefore, this may not be the ideal side for a strict keto diet. The low carb chicken eggplant fritters will be a better option for you.
I enjoyed making and eating this sauteed eggplant recipe. Since eggplants have a relatively soft texture inside before they cook, they tenderize quickly without the skin. So, once cooked, they will be really soft. However, in my opinion, sauteed eggplants are an easily acquired taste. I ate them by themselves. However, sauteed eggplants will easily go great with low carb chicken, turkey, or fish.

- 1 c. Eggplant (Cubed, Without Skin)
- 1 tsp. Olive Oil
- 1/4 tsp. Garlic Powder
- 1/2 tsp. Italian Seasoning
- 1/8 tsp. Mediterranean Sea Salt
Instructions
- Place the olive oil and eggplant in a small skillet.
- Stir the cubed eggplant pieces until they are coated in oil.
- Now sprinkle the eggplant with garlic powder, Italian seasoning blend, and sea salt.
- Stir to help coat all sides of the eggplant with the salt and herbs.
- Now place the skillet on a stove burner with a medium heat setting.
- Stir often until the eggplant is tender and cooked.
