Italian Cucumber Salad

This is a delicious keto low carb Italian cucumber salad! I made this Italian cucumber salad for a snack. However, with time flying by, it actually turned out to be my lunch. I ate a keto cobbler for breakfast. Therefore, this little Italian cucumber salad was what I needed.

Some keto dieters avoid tomatoes because they are naturally sweet. Therefore, I only used a few cherry tomatoes to boost my vitamin C intake. However, you can easily omit the tomatoes.

In addition to cucumbers and cherry tomatoes, I added capers, Mediterranean olives, and Mediterranean sea salt. And lastly, I made the Creamy Olive Salad Dressing recipe in the Keto Salad Dressing Recipes Cookbook. Olives and capers have a nice salty flavor, so the salt is optional.

Italian Cucumber Salad

Serves: 1-2 | Prep: 5 Mins

Ingredients:

1 c. Sliced Cucumbers

2-3 Cherry Tomatoes

1 Mediterranean Olives (Whole or Chopped)

1/2 tsp. Small Capers

Mediterranean Sea Salt (optional)

Creamy Olive Salad Dressing

Preparation:

  1. Use a cutting board and a knife to cut a large cucumber in half. Then, slice it down the middle.
  2. At this point, you should have half circles when you slice the cucumber for the salad.
  3. Slice the cucumber for the salad and then add them to a small bowl.
  4. Next, cut 2-3 cherry tomatoes in half. Add them to the top of the salad.
  5. And lastly, add capers and olives.
  6. Since the dressing has the flavor of olives, you only need to add a few chopped olives.
