Keto Low Carb Nacho Soup Recipe

I must say that this keto low carb nacho soup recipe is a restaurant quality soup. It is simple to make, but the flavors come together quickly.  I made a single serving of this nacho soup recipe. However, I will definitely double the recipe the next time in order to make enough for an easy round 2!

One of my favorite kinds of food to eat is Mexican food. Therefore, I am always super excited when I discover an easy keto low carb Tex-Mex recipe that taste good! This nacho soup recipe is made with cooked seasoned ground beef, cheese, cilantro, onions, tomatoes (optional), and cayenne pepper.

I would have preferred to add a small piece of fresh Serrano or jalapeno pepper instead of cayenne pepper to make the taste more authentic. However, the cayenne pepper worked out just as well for adding a little spice. So, let’s get to the easy keto low carb nacho soup recipe!

Keto Low Carb Nacho Soup Recipe

Serves: 1 -2 | Prep: 25 Min | Stove: Medium-High


1 c. Seasoned Cooked Ground Beef

Beef Seasoning: Seasoning Salt, Garlic Powder, Onion Powder

1-1/2 c. Water

2 oz. Cream Cheese

1/2 c.  Shredded Mozzarella Cheese

2 – 3 Fresh Chopped Cilantro

1/4 c. Chopped Yellow Onions

1/2 c. Diced Tomatoes (optional)

1/4 tsp. Cayenne Pepper


  1. Season thawed ground beef and cook thoroughly in a medium-large skillet.
  2. Drain excess fat and grease from the skillet.
  3. Carefully scoop 1 cup of cooked ground beef from the skillet into a small pot.
  4. Add water, onions, and cayenne pepper to the pot and bring the mixture to a boil.
  5. Next, reduce heat. Then, add cream cheese, mozzarella cheese, chopped cilantro, and tomato.
  6. Stir occasionally until both of the cheeses melt and blend together evenly.
  7. Serve and enjoy the nacho soup in a bowl while it is still hot.

One of the reasons that I enjoy cooking with ground beef is that it provides some low carb meal prep versatility. From one large packet of ground beef you can make a ground beef omelet, stuff beef biscuit, or minced beef omelette for a low carb breakfast. Or you can make  cheeseburger salad, cheeseburger pizza, or spaghetti squash for a low carb lunch or dinner.
