Ground Beef Omelette With A Tex-Mex Twist

Spice up your keto low carb breakfast routine with this delicious Ground Beef Omelette with a Tex-Mex Twist! If you cook the ground meat the night before, you can have a quick on-the-go microwave omelette in the morning.

For some of the other low carb breakfast omelette recipes, I have used a small round palm-sized microwave dish. For this particular omelette, I used a round microwave safe dish that is about the size of a small tortilla. In this way, it was just the right size for me to plate and eat.

So, let’s get right to this low carb ground beef omelette!

Ground Beef Omelette With A Tex-Mex Twist

Ground Beef Omelette

Microwave: 1 Min | Serves: 1

Ingredients:

1 Medium Egg

1 Tbsp. Mayonnaise ( I used Blue Plate Real Mayonnaise.)

Topping:

2 Tbsp. Shredded Mild Cheddar Cheese

1 Tbsp. Unsweetened Almond Milk

2 Tbsp. Cooked Ground Meat

1/2 Tsp. Roma Tomato (optional)

1/2 Tsp. Minced Jalapeno’s (Jar)

Cilantro (garnish & taste)

Preparation:

  1. First, add egg and mayo to your microwave safe dish.
  2. Next, use a whisk or fork to blend the mayonnaise into the egg well.
  3. Then, microwave in 30 second increments until cooked. My omelette was cooked after 1 minute in the microwave.
  4. Now, add cheese and almond milk to a small microwave safe dish.
  5. Microwave for about 15 – 30 seconds until cheese melts.
  6. Blend cheese and milk together.
  7. Then, stir in cooked ground beef.
  8. Lastly, make your low carb beef omelette by topping the cooked egg with the cheesy meat mixture, jalapeno, tomato, and cilantro.

Tips:

  • I only used one egg and blended it with mayonnaise to give this ground beef omelette a unique flavor and soft non-rubbery texture.
  • Alternatively, you can blend the meat, cheese, jalapenos, tomatoes, and cilantro together to evenly distribute the flavor.
  • If in a time crunch, you should definitely cook the ground meat ahead of time or set aside a small portion from one of your ground beef dinner recipes.
