For some of the other low carb breakfast omelette recipes, I have used a small round palm-sized microwave dish. For this particular omelette, I used a round microwave safe dish that is about the size of a small tortilla. In this way, it was just the right size for me to plate and eat.

Meat Topping:

  • 2 tbsp. Mild Cheddar Cheese
  • 1 tbsp. Unsweetened Almond Milk
  • 2 tbsp. Ground Meat (Pre-cooked)
  • 1/2 Tsp. Roma Tomato (Optional)
  • 1/2 Tsp. Jalapeno’s (Minced)
  • Cilantro (Optional garnish & flavor)

Instructions
 

  • First, add the egg(s) and mayonnaise to a flat bottomed medium-sized microwave safe dish. (Use a dish that is about the size of a tortilla.)
  • Use a whisk or a fork to blend the mayonnaise into the egg(s) well.
  • Then, place the dish in the microwave in 30 second increments until the egg cooks. My omelette was cooked in about 1 minute.
  • Now, add the cheese and the almond milk to a small microwave safe dish.
  • Microwave for about 15 – 30 seconds until the cheese melts.
  • Blend the cheese and milk together and then stir in the pre-cooked ground beef.
  • And lastly, make your low carb beef omelette by topping the cooked egg with the cheesy meat mixture, jalapeno, tomato, and cilantro.
