Low Carb Italian Salad (Keto-Style)

This is a delightful low carb Italian Salad that is likely more of an American Salad, than an Italian Salad.  There is an old adage that says, “when in Rome, do as Romans” as long as it does not go against your standards. Well, when in Rome I ate a delightful authentic Italian Salad that tasted nothing like the “Italian Salads” that I had eaten in the states.

The authentic Low Carb Italian Salad that I ate was super fresh with a large fresh piece of mozzarella cheese that I at first confused with an egg. It also included a boiled egg, fresh Roma tomato, olives, shredded chicken, and likely romaine lettuce. It was lightly salted and drizzled with what tasted like olive oil. It was a very healthy tasting low carb Italian salad.

Since I usually eat salads for meals, not sides, this low carb Italian salad recipe is my own high fat version of a low carb Italian Salad. Therefore, this is a very satisfying “keto-style” low carb Italian salad that goes well with out creamy olive keto salad dressing recipe. This particular salad includes three meats, olives, cheese, spinach, and iceberg lettuce.

Low Carb Italian Salad (Keto-Style)

Serves: 1 –  4

Ingredients:

3 – 4 c. Chopped Iceberg Lettuce

1/4 c. Sliced Fresh Spinach Leaves

1 Diced Green Onion

1/2 Small Roma Tomato

2 tbsp. Sliced Olives

7 – 8 Pepperoni Slices (I used Pepperidge Farm)

1/4 c. Salami or Pastrami Meat

Italian Cheese Blend

Powdered Parmesan Cheese

1/4 c. Chopped Chicken Breast (Canned) I used fresh cooked chicken.

Zesty Italian Dressing ( I used a light balsamic vinaigrette)

Keto-Friendly Dressing Alternative: Extra Virgin Olive Oil, Sea Salt, Black Pepper, Lemon Juice, Minced Garlic

Preparation:

  1. Add chopped lettuce to a shallow medium-sized bowl spreading evenly.
  2. Next, add pepperoni slices across the middle of the salad.
  3. To the right of the pepperoni, add olives, pastrami, and cooked chicken.
  4. Then, add green onions, cheese, Roma tomatoes, and spinach to the left of the pepperoni.
  5. If you like Parmesan cheese, sprinkle the top with a powdered Parmesan cheese. This will give this low carb Italian salad more of an Italian cheese flavor.

Conclusion

Clearly you can just dump all of the low carb Italian Salad ingredients in a bowl, add dressing, and eat up if you are in a time crunch.
