Cooked low carb vegetables are delicious as well, but it is very refreshing to enjoy a fresh crisp salad when possible – especially in the summer!

The low carb shrimp bacon salad is another really basic salad recipe. It includes fresh iceberg lettuce, cilantro or spinach, and grape tomatoes. The crisp cooked bacon and flavorful shrimp almost adds the final touch. If you decide to do so, you can also add a fresh avocado and jalapeno.

This shrimp bacon salad would go well with a spicy jalapeno dressing or avocado lime keto salad dressing. If you are on the keto diet, you can use a full fat dressing to feel full and meet your fat requirements for the day. However, when possible, if you are on a basic low carb diet, you can use the fat free version of ingredients when adding your favorite low carb dressings. Ingredients
  

  • 1-1/2 c. Iceberg Lettuce
  • 1/4 c. Cilantro (Chopped)
  • 1/4 c. Roma Tomatoes (Diced)
  • 1 Bacon Slice (Cooked)
  • 10 Shrimp (Cooked)
  • 1/4 c. Cheddar Cheese (Mild)
  • Avocado (Optional)
  • Jalapeno (Optional)

Instructions
 

  • Add chopped lettuce to a medium sized bowl or plate.
  • Next, add chopped cilantro to one side of the bowl as shown in picture.
  • Then, place diced tomatoes alongside the cilantro.
  • Add the cooked shrimp layer.
  • Sprinkle the cheese alongside the shrimp.
  • And finally add a strip of cooked bacon or crumbled bacon pieces.
  • Top with your favorite keto salad dressing recipe and enjoy.
