Low Carb Breakfast Egg Cups
So, I finally decided to try one of the low carb breakfast egg cups! For the most part, the low carb breakfast egg cups turned out really well. However, in my opinion, the low carb breakfast egg cups are ideal for low carb families or guests.
While the egg cup taste was definitely delicious, I still prefer the Healthy Avocado Omelette Recipe simply because it only takes 2 minutes in the microwave. With that said, the dark edge tasted just like bacon! A tasty effect that you cannot get from a microwaved omelette. So, lets get to the low carb breakfast egg cups recipe. I only made one ham, bell pepper, and cheese breakfast egg cup. However, multiplying the recipe to half a dozen is easy.
Low Carb Breakfast Cups
Oven: 375 | Time: 20 Min | Serves: 1
1 Tbsp. Chopped Green Bell Pepper
1 Tbsp. Mild Cheddar Cheese
3 Slices of Ham
1 Medium Egg
- I used three really thinly sliced pieces of ham to line the large baking cup.
- Using a small bowl, mix egg, bell pepper, and cheddar cheese together.
- Pour egg mixture into the baking cup lined with ham.
- Place in oven until egg mixture is cooked.
- Remove from the oven and enjoy while hot.
The low carb breakfast egg cups are not my favorite. However, they do add an interesting twist to your low carb breakfast.
