Low Carb Breakfast Egg Cups

So, I finally decided to try one of the low carb breakfast egg cups! For the most part, the low carb breakfast egg cups turned out really well. The low carb breakfast egg cups are ideal for low carb families or for a busy single person needing a  low carb breakfast on-the-go.

While the egg cup taste was definitely delicious, I still prefer the Healthy Avocado Omelette Recipe simply because it only takes 2 minutes in the microwave. With that said, if you leave some of the ham sticking out of the egg, the dark edge will turn dark and taste like bacon! While it does not have much of an eye-appeal, it does enhance the taste of the low carb breakfast egg cups. It is a tasty effect that you cannot get from a microwaved omelette. So, lets get to the low carb breakfast egg cups recipe.

Low Carb Breakfast Egg Cups

Low Carb Breakfast Egg CupsOven: 375 | Time: 20 Min | Serves: 6

Ingredients:

  • 6 Medium Eggs
  • 2 Tbsp. Chopped Cilantro
  • 2 Tbsp. Diced Tomatoes
  • 1 Tbsp. Mild Cheddar Cheese
  • 6 Slices of Ham
  • Salt (optional)
  • Pepper (optional)

Preparation:

  1. Place (stuff) six thin slices of deli ham in the bottom of a muffin pan.
  2. Using a small bowl, whisk eggs, cilantro, tomato and cheddar cheese together.
  3. Pour egg mixture over the ham in the muffin pan.
  4. Place the pan in the  oven until egg mixture is cooked.
  5. Remove from the oven, let cool  and remove from pan.

Conclusion

The low carb breakfast egg cups are not my favorite. However, they do add an interesting twist to your low carb breakfast on-the-go and reduce clean-up time. I like to mix things up with keto waffles, no-bake breakfast bars, keto oatmeal, and of course some of the recipes in out low carb breakfast cookbook.
