This healthy avocado omelette recipe is so quick, easy, and delicious.  In fact, it is one of the low carb breakfast recipes that can be made in the microwave. I have made this avocado omelette recipe for breakfast and lunch because it is convenient, healthy, and filling.

Since eggs are low carb, they are a really popular keto low carb breakfast food. Healthy Avocado Omelette Recipe

Serves: 1 | Microwave: 2 min | Prep: 5 min

Ingredients:

2 Eggs

2 – 3 Slice of Deli Meat (Chopped)

1 Tsp. Chopped Jalapeno’s

1 Tbsp. Diced Tomatoes

Dash of Salt

Cayenne Pepper (optional)

1 Small Fresh Cubed Avocado (Topping)

Preparation:

  1. Using a small round microwave safe bowl, add eggs, chopped deli meat, jalapeno’s, tomatoes, cayenne pepper, and a dash of salt.
  2. Stir until the egg yolks and egg whites are blended with the ingredients.
  3. Place in microwave for about 2 minutes.. The time it will take to cook varies depending on the size of your “small” bowl and the strength of your microwave. Therefore, you should observe the omelette recipe closely to determine how long it will need to cook in your microwave and bowl. Making this healthy avocado omelette recipe may take more or less time.
  4. After cooking, you can plate the avocado omelette recipe by placing it on a saucer. If you are in a hurry or not concerned about plating, you can easily cover with a lid and take it to go.
  5. Either way, top the omelette with fresh cubed avocado and a dash of sea salt.
