Easy Green Bean Recipe

This is an easy green bean recipe that anyone on a low carb diet can make! It took all of 5 minutes for me to prepare this low carb meal late last night. I tossed everything in a pot, and was still able to take care of other things for 15 minutes while it cooked!

I have eaten this easy green bean recipe several times over the years as a low carb meal.  After munching on low carb, high fat snacks throughout the day, it is just a simple way to end the day.

While I prefer fresh green beans, I keep “back up” frozen vegetables in the freezer for nights like this one. Green beans are high fiber, low carb vegetables. One cup of cooked green beans contain about 10 carbs  before adjusting your for the dietary fiber. While green beans contains many vitamins and minerals, it is highest in manganese and vitamins K and C.

Ingredients
  

  • 12 oz. Green Beans (Fresh or Frozen)
  • 6.5 oz. Turkey Sausage (Sliced)
  • 1/4 c. Yellow Onions (Chopped)
  • 1/4 tsp. Garlic (Minced)
  • 1 tbsp. Olive Oil (Extra Virgin)
  • 1/8 tsp. Black Pepper
  • Sea Salt (Optional)

Instructions
 

  • Add all ingredients to a medium-sized pot.
  • Gently stir and place over medium-high heat.
  • Cook until green beans are tender.

Conclusion

Many of my one-dish low carb meals make excellent side dishes for people with a larger family. But for me, it’s a meal because I eat most of the pot for dinner. And then I will eat the rest for a low carb breakfast, a light lunch, or a quick low carb snack.
