Easy Chicken Alfredo Pizza Recipe (Low Carb)

This low carb recipe is an easy chicken alfredo pizza recipe with a twist! Just when you thought you had to give up your spinach, chicken, and shrimp alfredo pasta –  a good substitute comes along! So, whether you have a taste for shrimp alfredo pizza or spinach alfredo pizza on your low carb diet, this pizza has got you covered.

The Twist

Easy Chicken Alfredo Pizza RecipeOven: 325 degrees | Bake: 5 – 8 minutes | Serves: 1 -2

The Toppings:

1 Cooked Low Carb Chicken Crust Pizza (recipe)

1-2 tbsp. Alfredo Sauce (I like this brand.)

1 Tsp. Capers ( I like this size.)

1/4 c. Pizza Cheese Combo ( I used Provolone & Swiss)

1 tbsp. Chopped Rotisserie or Cooked Chicken Breast (optional, whatever you used for the crust)

1 tbsp. Chopped Spinach ( I prefer fresh, but I used thawed frozen spinach.)

2 Slices of Roma Tomato (cut in halves)

5-6 Cooked Shrimp (thawed)

Preparation:

  1. Place the cooked chicken crust pizza on a cookie sheet or a pizza pan.
  2. Cover the crust with an Alfredo sauce.
  3. Then add your pizza cheese combo.
  4. Sprinkle with leftover chopped chicken.
  5. Arrange the cooked shrimp.
  6. Add tomatoes, spinach pieces, and capers.
  7. Place in the oven until the ingredients are hot and the cheese is melted.
  8. Remove from heat. Let it briefly cool, but enjoy while hot.

A few tips:

  1. Since it does not take long for cheese to cook and melt, I used room temperature ingredients for my toppings. So, your shrimp and spinach should not be icy cold and wet.
  2. Remove any excess water from the spinach and shrimp. Use a fork to drain the excess juice from capers.
  3. This particular low carb pizza crust can be refrigerated for a day or two. Therefore, you can make an extra to use for another low carb meal.
