I am definitely not an expert omelette maker, but I have had much success with making a microwave omelette recipe. Nevertheless, you can simply scramble this low carb omelette recipe and enjoy it all the same.

Serving Size: 1 |  Microwave: 1 to  1-1/2 Minutes


2  Medium Eggs

1 Tbsp. Mild Cheddar Cheese

1 Tbsp.  Fresh Chopped Spinach

1 Tbsp. Diced Tomato

Pinch of Black Pepper

Dash of Cayenne Pepper

Sea Salt (optional)

  1. Blend the eggs, tomatoes, spinach, cayenne pepper, and black pepper together in a small bowl.
  2. Place in the microwave for about 1 minute. If more time is needed, simply add 15 – 30 seconds until cooked.
  3. Top with mild cheddar cheese, diced tomatoes, and  fresh chopped spinach.
  4. You can take this low carb omelette recipe to go or place it on a plate to enjoy.
