Low Carb Cucumber Salad
This is a simple low carb cucumber salad recipe. However, it is quite tasty and refreshing. Cucumbers are about 95 percent water. Therefore, they can be quite refreshing in the heat. Research suggests that most of the nutrition is found in the seeds and skin. So, eat the skin and seeds if you can.
This low carb cucumber salad can be eaten as a snack throughout the day or with a meal as a low carb side dish.
To me, a low carb cucumber salad is a summer dish. Therefore, I prefer to eat it chilled in a variety of ways. The recipe that I am sharing today is made using a little sea salt and olive oil. However, cucumbers also taste great with a vinegar or a salad dressing.
Plus, cucumber are naturally low in fat, carbohydrates, sodium, fat, and cholesterol. As stated in our low carb vegetables post, 100 grams of cucumber equals about 3.6 carbs. Therefore, this low carb cucumber salad is an excellent choice for anyone following a low carb, low fat diet plan.
Prep Time: 10 minutes
Yields: 1 – 11/2 Cups
Serves: 1 – 2
1 C. Sliced Cucumbers
2 Small Diced Vine Ripe Tomato
2 Tsp. Capers
1 1/2 Tsp. Chopped Yellow Onions
1 Tsp. Extra Virgin Olive Oil
Dash of Sea Salt (optional)
- Add cucumbers, tomatoes, capers, and onions to a small bowl.
- Gently mix the ingredients together.
- Add olive oil and sea salt.
- Toss the cucumber salad until it is lightly covered with oil.
- Refrigerate for about an hour to let the flavor marinade.
This low carb cucumber salad is an easy snack. However, to me, this particular recipe tastes like an Italian cucumber salsa. In fact, I diced the tomatoes and cucumbers into bite sized piece.
